CULINARY ARTS

The culinary arts fall into the overall field of hospitality management yet stand alone in that professionals in this field require specialized training enabling them to become experts in the kitchen. Foodservice encompasses restaurants, corporate dining, institutional settings, cruise and airline catering, private chef and consulting opportunities to name a few. There are over 23,000 restaurants in New York City alone, considered by most to be the culinary capital of the world.

Monroe is the only accredited college in the area which educates students in a full service restaurant enabling them to experience firsthand the demands of guests, meal periods and the various challenges that come with an unscripted environment. It is best that students be taught in such a manner so that they gain the ability to solve problems and work in teams. Our chef instructors represent a diverse background and many operate their own restaurants or are executive chefs at some of the premier establishments in the region.

   In addition to the core of culinary, baking and related courses one takes, there are constantly new electives designed by our chefs, highlighting their own expertise. Select students may participate in our Travel Abroad program to Italy in the fall semester. This includes a semester of study at the Barilla Institute in Parma, Italy working alongside some of the most talented chefs and researchers in the world.

   Graduates of the Associate in Applied Science degree program will be prepared to enter the industry as chef tournants, and assistant pastry chefs. Graduates are encouraged to enroll into the Bachelor of Business Administration degree in Hospitality Management in order to become more proficient in management techniques, hone culinary skills and enter the industry as assistant food & beverage managers, sous chefs or a variety of other more senior positions.

HOSPITALITY MANAGEMENT

  New York is the Hospitality Capital of the World. In New York City alone, there are over 200 hotels and 23,000 restaurants as well as countless university, yacht or professional clubs, two airports, a cruise line terminal and endless opportunities for gainful employment. People from all over the world compete to work in this area and Monroe is proud to have close ties to the hospitality industry here.

  The program focuses upon developing a graduate who is able to enter the industry able to work in teams, communicate very effectively and solve problems quickly. Realizing that each guest comes with different expectations, concerns, and even problems, our graduates are taught how to effectively work through a variety of situations.

  The program makes great use out of an esteemed Advisory Board, connections with the local lodging and foodservice industry and with international partnerships. Without question, Monroe graduates are well prepared to enter their profession.

MEDICAL ADMINISTRATION

   The Medical Administration program meets the needs of students who wish to gain the competencies and skills necessary to prepare them to begin or advance careers in health offices as administrative support personnel. The program leads to the Associate in Applied Science (A.A.S.) Degree. Graduates of the program will be prepared to enter a wide variety of entry positions in the field of medical administration.

   Students will acquire the knowledge and competencies needed to use computers, as well as administrative, interpersonal, technical, and presentation skills. These skills enable graduates of the program to function as effective professionals in the health care offices that make up today’s complex and changing medical service environment, and to advance in their careers.
